Tofu and Vegetable Shepherd’s Pie

If you’re looking for a recipe that’s equal parts healthy and hearty, this recipe will be a winner for those colder nights and it’s perfect to meal prep for a bunch of servings. It does take some time to prepare just because of the cooling time for the mashed potatoes and filling so the shepherd’s pie maintains structure while it’s in the oven.

This recipe is:

  • Savoury
  • A tinge of sweet
  • Hearty
  • Cosy
  • Indulgent

Ingredients (makes around 6 servings)

  • 5-6 medium potatoes
  • 2 tbsp vegan butter
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 onion, diced
  • 400g mushrooms, diced
  • 400g firm tofu, chopped into cubes
  • 1 vegetable stock cube
  • 1/2 cup plain flour
  • Vegan cheese (optional)

Sauce ingredients

  • 2 tbsp tomato sauce
  • 3 tbsp light soy sauce
  • 2 tbsp apple cider vinegar
  • 1 tbsp raw sugar
  • 1 tsp mixed herbs

Method

  1. Peel the potatoes and cut them into quarters. Boil for 15-20 minutes or until softened.
  2. Meanwhile, you can prepare cutting the rest of the vegetables if you haven’t already: celery, carrot, onion, mushrooms and tofu.
  3. Drain the potatoes and mash them in the pot until fluffy, adding vegan butter and combining well. Set aside to cool down and you can spread it out on a tray to speed up the process.
  4. On a pan on medium heat, add oil and fry the tofu on all sides until mostly golden. Set aside.
  5. Combine and mix all the sauce ingredients in a small bowl.
6.In the same pan, fry the onion, carrots, celery and mushrooms for 5-7 minutes or until slightly softened.
  6. Add the tofu back in, along with the flour and crumbled vegetable stock cube. While the mixture thickens, let it simmer for 3-5 minutes. Turn off the heat and set aside for 30 minutes.
  7. Preheat the oven to 200C. In a baking dish, add the filling ingredients at the bottom and pack it down.
  8. Scoop the mashed potatoes and spread it over the top in chunks. Create a textured appearance and sprinkle vegan cheese on top (optional).
  9. Bake the shepherd’s pie for 30-40 minutes. The top will have a slight golden appearance.
  10. Enjoy on it’s own or with your favourite sides!
