Today I have a simple and satisfying char siu inspired recipe using oyster mushrooms! Oyster mushrooms are really like no other, they crisp up beautifully and leave a charred flavour without any sogginess. The meaty and chewy texture goes so well with the crunchy vegetables and the sweet hoisin sauce. Super tasty and quick to put together.





Ingredients – makes around 7 wraps
300 g oyster mushrooms
-½ carrot, julienned
-½ cucumber, julienned
-1 spring onion stalk, julienned
-Peking duck wraps
For the char siu sauce
- 1/3 cup water
- 2-3 tbsp hoisin sauce
- 2 tbsp oyster sauce
- 1 tbsp dark soy sauce
- 1 tbsp light soy sauce
- 1 tbsp rice syrup
- 1 tsp white pepper
Method
- Mix all of the char siu sauce ingredients in a small bowl.
- On low heat, fry the oyster mushrooms in a pan for 10 minutes or until softened and charred.
- Pour the char siu sauce ingredients into the pan and stir until thickened and absorbed by the mushrooms. Meanwhile, microwave or steam the peking duck wraps.
- Assemble the peking duck wraps by adding hoisin sauce, cucumber, carrot, spring onion and oyster mushrooms.
