Chinese Corn Soup

Here is a recipe that has minimal ingredients but a delicious sweet and savoury taste. For a more filling meal, you can add in silken tofu and serve it with rice.

Ingredients

  • 1 can of corn kernels
  • 1 small thumb ginger, minced
  • 2-3 cloves garlic, minced
  • 3 spring onion stalks, chopped
  • 1L water
  • 1 vegetable stock cube
  • White pepper to taste
  • 2 tbsp corn starch mixed in a splash of water

 Method

  1. On medium heat in a pot, add the ginger, half of the spring onions and garlic. Fry for a few minutes until fragrant.
  2. Add in the corn kernels and mix to combine.
  3. Pour in water and crumble in a vegetable stock cube.
  4. Transfer a few ladles of the mixture to a blender and pulse a few times until consistency is chunky. Pour it back into the pot. Blend more of the mixture if desired.
  5. Add corn starch mixture and stir until soup has thickened.
  6. Add white pepper to taste and spring chopped spring onions for garnish.
