Vegan LCMs (Rice Krispie Treats)

These bars use minimal ingredients and are my version of LCM bars in Australia or Rice Krispie Treats in the US. I used half a bag of vegan Dandies marshmallows, but you can use the whole bag or even 3/4 of the bag for more chewiness and just add more rice bubbles. The ratios that I used create a delightfully sweet and slightly crunchy bar with bits of chewiness.

Ingredients – makes 8 bars

  • 2.5 cups rice bubbles (I just used home brand)
  • 2 tbsp vegan butter – I used Nuttelex
  • 150 g vegan marshmallows – I used Dandies
  • 1 tbsp 100s & 1000s

Method

  1. In a saucepan on low heat, add the vegan butter and the vegan marshmallows. Stir until gooey and melted down (5-10 mins).
  2. Turn off the heat and add in the rice bubbles. Fold into the mixture until well combined.
  3. Transfer to a small 8×8 lined baking tray and press down firmly and evenly. Sprinkle on 100s & 1000s and press down again.
  4. Let it chill in the fridge for 20 minutes until hardened.
  5. Slice into bars and enjoy!
