Lentil, TVP & Sweet Potato Chili

A comforting meal perfect for those colder nights that is both easy to make and ideal for meal prep.

Meal prep as self care

I believe that part of self care is looking out for your future self. I enjoy meal prepping because firstly, cooking to me is relaxing and I like to put in a bit of effort to make sure my future self is nourished and secured when it comes to food.

Ingredients – Makes 4-5 servings

  • 2 sweet potatoes, cut into bite sized pieces
  • 1 can brown lentils
  • 1 cup TVP, soaked
  • 1 can diced tomatoes
  • 3 cups cherry tomatoes
  • 1 onion, diced
  • 2 cups baby spinach
  • 1 cup vegetable stock
  • Rice, to serve

 Flavouring (approx. measurements, adjust to taste)

  • 2 tbsp cumin
  • 2 tbsp smoked paprika
  • 2 tbsp cinnamon
  • 2 tsp chilli powder
  • 3 tbsp soy sauce
  • 1 tbsp salt
  • 1 tbsp garlic powder
  1. Start cooking the rice (I used a rice cooker) and put the sweet potatoes in the oven. 
  2. Meanwhile, in a large pot on medium heat, fry onions until translucent. Add in cherry tomatoes and cook down, mashing them while stirring. 
  3. Add in pre-soaked TVP, lentils, diced tomatoes, veggie stock and flavouring ingredients. Stir and combine well in the pot.
  4. Add in the baby spinach, then the sweet potatoes when softened. Adjust seasoning if desired and serve with rice!
