A comforting meal perfect for those colder nights that is both easy to make and ideal for meal prep.
Meal prep as self care
I believe that part of self care is looking out for your future self. I enjoy meal prepping because firstly, cooking to me is relaxing and I like to put in a bit of effort to make sure my future self is nourished and secured when it comes to food.

Ingredients – Makes 4-5 servings
- 2 sweet potatoes, cut into bite sized pieces
- 1 can brown lentils
- 1 cup TVP, soaked
- 1 can diced tomatoes
- 3 cups cherry tomatoes
- 1 onion, diced
- 2 cups baby spinach
- 1 cup vegetable stock
- Rice, to serve
Flavouring (approx. measurements, adjust to taste)
- 2 tbsp cumin
- 2 tbsp smoked paprika
- 2 tbsp cinnamon
- 2 tsp chilli powder
- 3 tbsp soy sauce
- 1 tbsp salt
- 1 tbsp garlic powder
- Start cooking the rice (I used a rice cooker) and put the sweet potatoes in the oven.
- Meanwhile, in a large pot on medium heat, fry onions until translucent. Add in cherry tomatoes and cook down, mashing them while stirring.
- Add in pre-soaked TVP, lentils, diced tomatoes, veggie stock and flavouring ingredients. Stir and combine well in the pot.
- Add in the baby spinach, then the sweet potatoes when softened. Adjust seasoning if desired and serve with rice!
